Sweet potato stuffed with vegetables
Have you tried sweet potato yet? If not, include it in your diet right away to ensure a great amount of vitamin A!
Ingredients:
1 big sweet potato
4 tbsp cooked red beans
2 spring onions, finely chopped
1 handful mixed baby greens
2 handfuls grated cabbage
1/2 fresh red peppers, diced
For dressing:
1 tbsp olive oil
1 tbsp extra virgin oil
a pinch of Himalayan salt
Instructions:
Preheat the oven at 220°C. Pierce the sweet potato several times with a fork and place it in a pan covered with baking paper. Pour over the olive oil and Himalayan salt. Bake for 25 minutes. When the sweet potato is done, let it cool down, then fill it with beans, spring onions, mixed baby greens, cabbage, and red peppers. Pour over 1 tbsp extra virgin oil.
