Thai mango salad

This great summer salad, which you can prepare in just 20 minutes, is an excellent choice on these warm days. You can serve it with a refreshing dressing of lime and soy sauce. I guarantee you’ll like it! Look for the recipe below. Bon appetit!

Preparation time: 20 minutes
Servings: 2

Ingredients:
1 cucumber, chopped into thin sticks
2 carrots, peeled into thin strips with a peeler
1 mango, cut into small pieces
1 handful of cherry tomatoes, cut in half
1 handful of cashews
1 handful of fresh parsley leaves, finely chopped
a few fresh mint leaves

Dressing ingredients:
2 tbsp soy sauce
1 tbsp coconut sugar
1 garlic clove, mashed
½ tsp red chili pepper flakes
1 lime juice

Instructions:
1. To prepare the dressing, mix all the ingredients in a small bowl and stir until combined. Leave to rest.
2. Arrange the previously chopped vegetables and fruits in a large bowl, then coat with the dressing.
3. Serve and enjoy.
