Thai soup with carrots and coconut milk

Ingredients:
1 tbsp olive oil
1 onion, diced
3 cups carrots, finely chopped
4 garlic cloves, minced
2 tsp curry paste
2 tbsp fresh cilantro
1 tsp ground cumin
⅛ tsp red pepper flakes, optional
2 dl vegetable broth or water
2 dl coconut milk
1 tbsp lemon juice
salt and pepper to taste
Instructions:
Heat the oil in the pot on medium temperature, add onion and carrots and saute for 5 minutes or until onion is tender and see-through. Add garlic, curry paste, cilantro, cumin and red pepper flakes. Saute for 10 minutes and stir occasionally. Add vegetable broth, coconut milk and carrots. Reduce the heat and cook for 20 minutes or until the carrots are tender. Season with salt and pepper to taste. Remove the pot from the stove and let it cool down. Pour it in a blender and blend until it reaches a smooth and creamy consistency. Pour it back in the pot and add lemon juice. Garnish with cilantro and just a dash of coconut milk.
