Vegan mashed potato with chard
Today I have prepared a dish I believe everyone has on their menus. It is vegan mashed potato with chard but in a Totally Wellness way.
Ingredients:
2 white potatoes
1 bunch chard
2 garlic cloves
1 dl unsweetened soya milk
1 tbsp olive oil
Salt and pepper as preferred
Instructions:
Peel 2 potatoes, then dice and boil them. After the potatoes are done, drain them and put them back in the cooking pan. Meanwhile, mince 2 garlic cloves and poach on olive oil in a frying pan. Add washed and chopped chard. Stir, then add 2 tbsp water. Leave the chard to poach for about 2 minutes then move the frying pan off the stove. Take a whisker or a mixer, depending on what you prefer to use for making mashed potatoes, then with unsweetened soy milk, salt and pepper, mix the potatoes to make it mashed. When it’s done add the chard, and a bit more salt if needed.
