Vegan Mexican tortilla rolls
Serve these vegan Mexican tortilla rolls for a snack or appetizer. They require cream cheese, but I use homemade hummus. Add paprika, garlic, lime juice, oregano, or herbs and spices. Instructions are below.
Preparation time: 20 minutes
5 gluten-free tortillas
5 tbsp hummus
1 cup cooked black beans
2 red peppers, chopped into sticks
1 cup cooked sweet corn
½ onion, chopped into crescents
3 tbsp hot green peppers, finely chopped
5 tbsp fresh parsley leaves, finely chopped
1. Coat each gluten-free tortilla with 1 tablespoon of hummus, then place 1 tablespoon of all other ingredients over it, and place ½ tablespoon of jalapeño peppers.
2. Roll gluten-free tortillas, and cut them into bite-sized pieces.
3. Serve and enjoy.
