Vegan pasta

Pasta is a favorite meal for most people. Whether you are vegetarian, vegan or trying to eat less animal protein, delicious healthy pasta is a great choice for lunch or dinner. This recipe for vegan pasta does not contain any dairy products. If you follow a gluten-free diet, choose pasta that is certified gluten-free. If not, my recommendation is whole wheat pasta.

Ingredients:
150 g of gluten-free pasta per person
1 cup chopped baked walnuts
3 cups broccoli
1 ½ cups cooked green lentils
1 red bell pepper, diced
1 tbsp kuzu powder diluted in 1 dl of water
1 ½ cups tomato juice
3 tbs + 1 tbs olive oil
1 garlic clove, minced
1 ½ tsp cumin
1 tbsp chili powder
2-4 tbs water

Instructions:
Cook pasta and green lentils in separate pots according to package directions. In a large saucepan over medium heat bake the chopped walnuts, stirring frequently, for 5-8 minutes. When walnuts get yellowish color, add minced garlic and stir for about 30 seconds. Fry broccoli separately over medium heat with 1 tbsp olive oil for about 2 minutes. Add red bell pepper chopped bell pepper and saute for 2 to 3 minutes until it gets tender. In a frying pan with walnuts and garlic, add tomato juice, kuzu powder, olive oil, cumin, chili powder and 2 tbs water. Cook together for 3 minutes. Then add broccoli, pepper, green lentils and pasta, and cook for a few more minutes together with frequent stirring. Note: If the sauce is too thick add the remaining 2 tbs water.
