Vegan pumpkin parfait with cinnamon

Servings: 4
Pumpkin parfait ingredients:
1 cup pumpkin puree (You’ll get it by mashing the steamed pumpkin.)
½ cup raw cashews
½ cup unsweetened coconut milk
¼ cup organic honey
1 ½ tsp cinnamon
1 ½ tsp vanilla extract
a pinch of salt
Decoration:
Chopped walnuts
Coconut whipped cream
Instructions:
1. Mix the parfait ingredients and blend until smooth. Leave the resulting mixture to cool for 4-6 hours, or overnight.
2. Pour the parfait evenly in bowls, cover with walnuts and coconut whipped cream on top.
3. Enjoy.
