Vegan salad with beans

A vegan salad with beans is ​​a perfect choice for lunch or dinner! The great thing is that you can take it wherever you go, and it’s especially useful for those who work and don’t have time to go for long lunch breaks. This recipe is rich in protein which comes from beans and quinoa. It’s a gluten-free meal and also contains healthy fats.

Ingredients:
2 cups water
1 cup white quinoa
3 tbsp ground flaxseed
2 cherry tomatoes, cut in half
4 tbsp cooked sweet corn
1 orange pepper, diced
2 cans of black beans, drained and washed
1 red onion, diced
½ bunch of parsley leaves, finely chopped
1 tbsp red chili flakes
3-4 limes, juiced
1 large avocado, chopped into slices
salt and pepper to taste

Instructions:
Boil 2 cups of water then add the quinoa and some sea salt, cover the pan until the water soaks, about 15 minutes. Remove from the heat and keep it covered while preparing other ingredients. Chop the red onion and put it into a bowl. Add lime juice and sea salt. Add tomatoes, peppers, corn, parsley leaves and chili peppers. Try it and adjust the lime dressing by adding salt and pepper if needed. Then sprinkle flax seeds over the quinoa and gently stir, add black beans and combine with vegetables. Stir everything well. Serve in a large bowl with a few slices of fresh avocado on top. Enjoy!
