Vegan sour cherry orange muffins
Muffins are never enough! In addition to being easy and quick to prepare, during the preparation you have the opportunity to experiment with ingredients, so you can get a different treat each time. This time, I added orange peel and juice to the muffin mixture, as well as cherries, which contributed to the fantastic taste of this dessert. Try out the recipe.

Servings: 9 muffins
Ingredients:
2 cups wholewheat flour
¾ cup coconut sugar
1 tsp baking soda
a pinch of salt
1 cup orange juice
½ cup unsweetened applesauce
2 cups cherries, fresh or frozen + a little more for decoration
1 tbsp orange peel, grated
Instructions:
1. Preheat the oven at 180 °C. Line the muffin mold with baking paper.
2. Put all the ingredients in a bowl and stir to get the muffin mixture.
3. Pour the resulting mixture in a muffin mold with a spoon, then put a few cherries on top, if desired.
4. Put the mold in the oven and bake for 30 minutes.
5. Serve and enjoy.
