Vegan tiramisu
I am sure that you haven’t had a chance to try this healthier, vegan version of tiramisu cake yet. Even though I replaced certain ingredients, the taste is still recognizable. Try out the recipe and let me know if you like it.
Preparation time: 40 minutes to prepare and 8 hours to cool down
Servings: 8 slices
Ingredients:
300 g silken tofu cheese, chopped into small pieces
1 ½ cup coconut cream
4 tbsp coconut sugar
200 g gluten-free sweet crackers
200 ml coffee
Decoration:
1 tsp raw cacao powder
fresh fruit, as desired
Instructions:
1. Strain the silken tofu cheese, chop it into small pieces, and put it into a blender. Add coconut cream and coconut sugar, then blend everything until you get a creamy filling.
2. Soak the gluten-free sweet crackers in coffee, then place one part of them at the bottom of a refractory bowl.
3. After that, spread the filling over them.
4. Place the other layer of crackers over the filling, and spread the filling over them. The number of layers depends on the depth of a refractory bowl you are using.
5. Sprinkle the last filling layer with raw cacao powder and decorate with fresh fruit, as desired.
6. Put the cake into the fridge for 8 hours to harden.
7. Serve and enjoy.
