Vegetable casserole
My casserole with vegetables will surely find its way to your heart. 🙂 Even though many add processed meat (chopped ham or salami) to this kind of recipe, I suggest trying how you like the mix of eggs with mushrooms, tofu cheese, spinach, onions, and spices. Enjoy!
Ingredients:
1 red pepper, cut into rings
1 ½ cup mushrooms
2 tbsp olive oil
12 eggs
1 handful baby spinach
1 clove garlic
1 tsp unrefined sea salt
½ tsp black pepper
½ cup raw tofu cheese
2 scallions, finely chopped
Instructions:
Preheat the oven to 220 °C. Put baking paper in a baking sheet and arrange mushrooms and peppers. Pour over the baking sheet 2 tbsp of olive oil, then add salt and black pepper. Bake for 10 minutes. In a medium-sized bowl, whisk together eggs, spinach, tofu cheese, scallions, salt, and black pepper. Reduce oven temperature to 175 ° C. Pour over vegetables whipped egg mixture. Bake for 30 minutes, until the eggs are done. Let the dish cool down for 10 minutes before serving. Have a nice meal!
