Vegetable rolls with mango sauce

Healthy, delicious and very easy to make – the summer vegan rolls! They are great to combine with some fresh vegetables and mango sauce which gives a special touch.

Ingredients:
10 rice papers
1 avocado
1 large carrot
2 red peppers
5 pieces of spring onion
1 handful small lettuce leaves
1 handful fresh cilantro, finely chopped

For mango sauce:
1 mango, chopped
100 ml soya yogurt
1 green jalapeno pepper, finely chopped
½ tsp red pepper flakes
salt and pepper to taste

Instructions:
First, peel and chop the mango, place in a blender along with jalapeno pepper, yogurt, chili, add salt and pepper to taste. Blend until smooth, then pour it into a bowl where you will dip them. Cut carrots, onions and peppers into thin strips. Peel and chop the avocado. To roll rice paper easily, it’s necessary to put them in warm water for about 2-3 seconds. Then, in the middle of a rice paper sheet place a lettuce leaf, add a layer of mango sauce and finally fill it with vegetables. Wrap the rolls and cut them in half to make them look prettier. Serve them in a plate with more mango sauce for dipping.
