Winter broccoli salad
Try this delicious winter broccoli salad which includes a great mix of fresh ingredients. The dressing made with ginger and garlic will add a special taste. Enjoy!
Ingredients:
1 head of broccoli, separated into small flowers
1 tbsp sesame oil
2 garlic cloves, minced
1 handful mixed baby greens
3 handfuls grated carrots
2 red peppers, diced
¼ cup fresh parsley and basil
1 pomegranate, seeds
1 grapefruit
Dressing:
1 tbsp sesame oil
½ tsp Himalayan salt
1 clove garlic, minced
1 tbsp Tamari sauce
2 cm fresh ginger root
juice from ½ lemon
1 tbsp raw organic honey
a pinch ground red pepper
Instructions:
In a frying pan heat 1 tbsp of sesame oil and fry the garlic and broccoli up to 4 minutes. Transfer the broccoli to the bowl, and in the same pan add the dressing ingredients in the following order: 2 tbsp of sesame oil, garlic and ginger. Simmer for about 5 minutes at medium heat. Remove from the heat, add lemon juice, tamari sauce, honey, salt and ground red pepper. Let the dressing cool down and then pour it over the broccoli and mix you previously served into the bowl. Then add the carrots, peppers, parsley, basil and pomegranate seeds. Sprinkle with salt. Add grapefruit before serving and enjoy your meal!
