Vegan pasta with peas rocket sauce

This is my dream pasta! Fantastic combination of pasta and green peas coated with a green dressing of green peas and fresh rocket. Look below for the recipe for this vegan dish. It’s very easy and simple to prepare. Try it out and let me know your impressions.

Preparation time: 30 minutes
Servings: 2

Ingredients:
150 g gluten-free pasta
½ cup onion, finely chopped
1 garlic clove, mashed
3 tbsp olive oil
2 ½ cups green peas, fresh or frozen
1 ¼ cup water
1 tbsp lemon juice
⅓ cup rocket
¾ tsp salt
½ tsp black pepper
1 tsp miso paste
3 tbsp almond butter
½ cup fresh lamb’s lettuce for serving

Instructions:
1. Cook the gluten-free pasta by following packaging instructions, then set it aside.
2. Heat the olive oil in a large pan at moderate temperature. Put in the onion and garlic, then simmer for 4-5 minutes, until golden. Add 2 cups of green peas and stir. If you use fresh green peas, cover it with a lid to steam, for about 3 minutes, or until softened and brightened. If you use frozen green peas, simmer until it completely melts.
3. Separate 1 ½ cup of stewed green peas and onion (leave the rest in the pan), then put it in a blender with water, 1 tbsp of lemon juice, rocket, salt, black pepper, miso paste, and almond butter. Blend until smooth. Set aside the resulting sauce.
4. Add ½ cup of green peas in the pan with the remaining stewed green peas and onion, and stir for 30-60 seconds at moderate temperature. Pour the resulting mixture in a separate bowl, then add the gluten-free pasta, green peas sauce and mix everything well.
5. Serve with fresh lamb’s lettuce and enjoy.
