Avocado cucumber sushi

This is a recipe for sushi in a Totally Wellness way. I prepared it with nori algae leaves and colorful vegetables. I guarantee you that it tastes and looks better than the one you can order at a restaurant.

Preparation time: 40 minutes
Servings: 2

Ingredients:
3-4 nori algae leaves
1 small head of cauliflower, chopped into florets
3 tbsp water
1 tbsp apple cider vinegar
1 mango, sliced
1 avocado, sliced
1 cucumber, chopped into sticks
¼ red cabbage head, finely chopped

Decoration:
1 tbsp black sesame seeds
1 tbsp soy sauce

Instructions:
1. Make cauliflower rice by grating cauliflower florets, or chopping them in a food processor.
2. Heat 3 tbsp of water in a pot at moderate temperature, add cauliflower rice and simmer while stirring constantly for about 4-5 minutes. Remove from the heat, add apple cider vinegar and mix well. Leave to cool down.
3. Fill a small pot with water, to be by your hand. Set nori algae leaf with the shiny side down. Spread cauliflower rice on the ⅔ of nori algae leaf, and arrange mango, avocado, cucumber, and red cabbage lengthwise. Start rolling the leaf, folding mango, avocado, cucumber, and red cabbage. Press well to harden and continue rolling. Tap the top end of the nori algae leaf with a wet finger. Leave to rest for a few minutes before cutting. Nori algae will soften. Repeat the process until you use all ingredients.
4. Cut the roll into pieces. Sprinkle with black sesame seeds, then serve with soy sauce.
5. Serve and enjoy.
